Malabi Dessert

Malabi which is also known as Muhallabia or Mahallebi is a creamy milk-based pudding from Iran. Malabi requires minimal ingredients and is very easy to prepare. It is a perfect dish for Iftar. This Rose flavoured Pudding is very popular across the Middle East. You top it with any syrup like rose syrup, Raspberry syrup or even Pomegranate syrup. I have used Homemade Rose Syrup.

Traditionally, Rice flour is used to thicken the milk. But, I have used cornstarch or cornflour in order to get that silky texture. I have used Roasted Peanuts and my Homemade Desiccated Coconut for garnishing. But, You can use any other nuts.

You can prepare this dish ahead of time and refrigerate it and Just before serving Pour some rose syrup sprinkle some nuts on top.

Ingredients
  • Milk 2 cups
  • Rose Essence ½ Tsp
  • Cornflour ⅓ Cup
  • Sugar ½ Cup
  • Rose Syrup ½ Cup
  • For Garnish:
  • Roasted peanuts
  • Desiccated Coconut
Instructions
  1. Take Cornflour in a bowl
  2. Add ½ cup milk and rose essence and mix well to form a lump free mixture.
  3. Heat the remaining Milk. Add the sugar.
  4. When it comes to a boil, reduce the flame. Add the cornflour mixture and cook on a low heat until it starts to thicken. This will take about 4 to 5 mins.
  5. Allow it cool down slightly.
  6. Pour into individual serving dishes.
  7. Refrigerate for at least 4 to 5 hours.
  8. Just before serving, Pour 2 tbsp of Rose syrup on top.
  9. Top it with Chopped peanuts and Desiccated coconut.
