Sachertorte Without Oven

Sachertorte or cake is a special type of chocolate cake invented by Austrian Franz Sacher. This classic cake has a rich and light chocolate cake filled with apricot jam and covered with dark chocolate glaze. I made this classic dessert without Oven so that people who don’t have oven can also try. The result was amazing. But there was one issue I faced. After I finished the cake I realized I didn’t write Sacher. By the time I realized it my glaze had already hardened. I heated it again to warm it up. It became too runny. somehow I managed to write. but It was not so neat.

Traditionally apricot jam is used. but I believe you can use any jam. does not make much difference. I did not have the apricot jam but I did have dried apricots lying in my fridge. I thought I’ll use that up. So I prepared the jam from scratch.

While whipping the egg whites for the cake do not over-whip the whites. Just whip until soft peaks are formed. Also, When folding the whites into the batter, Do it gently else the whites will get deflated and you will end up with a dense cake.

If you are going to bake in an oven then bake in a preheated oven at 180 c for 30 to 40 mins or until a toothpick inserted comes out clean.

Ingredients
  • For the cake:
  • Flour ½ cup
  • Powdered sugar ½ cup + ¼ cup
  • Dark chocolate 100 gms
  • Egg yolks 4
  • Egg whites 5
  • Butter 75 gms
  • Vanilla essence 1 tsp
  • Salt ¼ Tsp
  • For icing:
  • Dark Chocolate 200 gms
  • Sugar 1 cup
  • Water ½ cup
  • For the apricot jam:
  • Dried apricots ½ cup
  • Sugar ¼ cup
Instructions
  1. Take a wide Mouthed Aluminium vessel.
  2. Add a layer of salt.
  3. Place a small plate inside and preheat for 10 mins.
  4. In a large mixing bowl beat the butter until creamy.
  5. Add in the sugar and beat until pale and creamy.
  6. Next, Add the egg yolks one at a time and beat until combined. Stir in the vanilla essence.
  7. Meanwhile, melt chocolate over the double boiler and add to the butter mixture.
  8. Take egg whites in a clean and dry bowl and add salt. Beat until foamy.
  9. Gradually add the second measure of powdered sugar and beat until soft peaks form.
  10. Gently fold half of the egg whites into the chocolate mixture.
  11. Fold in the remaining whites. Gradually add the sifted flour into the mixture.
  12. Pour the batter into a greased 7 inch round tin. Place it inside the preheated vessel and cover it.
  13. Bake for 30 to 40 mins on low flame.
  14. Invert the cake onto a cooling rack and let it cool completely.
  15. To prepare the jam, Combine the chopped apricots, sugar and water in a saucepan.
  16. Cook for 10 to 15 mins on low flame until it softens. allow it to cool down completely.
  17. Grind to a smooth paste.
  18. Divide the cake into two layers. Take the first layer.
  19. Spread half of the jam.
  20. Place the second layer. Spread the jam on the top and sides of the cake. Let it dry for 30 mins.
  21. To prepare glaze, add the sugar and water into a saucepan and let it come to a boil. Cook for 10 mins.
  22. Add it to the chocolate pieces and mix until smooth. (If it thickens, Return it over a low flame with a few drops of water until it reaches a pourable consistency.)
  23. Pour the hot glaze over the cake starting from the edges. Let the glaze set at room temperature for 1 to 2 hours. Use the leftover glaze to write Sacher.
  24. Cut into wedges and serve.
