Roasted Tomato Puree gives a nice smoky flavour to the dishes. You can add it to any gravy or use it as a dip by adding some spices and herbs along with chopped garlic. You can easily prepare it at home instead of buying it from the market. It is cheap as well as free of preservatives.
You can store this in an air-tight glass container for up to a month. Use a clean dry spoon every time. You can roast the tomatoes in the oven or directly on the gas burner. Since I roasted just three tomatoes I did it on the gas burner. I used this in my Chicken Lababdar recipe.

- Wash the tomatoes.
- Place it on a wire rack and heat it on direct flame.
- Once it is nicely charred switch off the flame.
- Add it to cold water.
- Remove the black skin and grind to a smooth paste.
- Store in an air-tight container.
