Pink Passion Ice Cream – Ideal Ice Cream

Ideal Ice Cream is the biggest Ice Cream parlour in Mangalore. I have tried so many brands of Ice Cream but Ideal Ice Cream remains to be my favourite. They have so many different flavours and Pink Passion is one of them. It is one of my favourite flavours. Pink Passion Ice Cream is nothing but Gulkand or Rose preserve Ice Cream with chopped cashew nuts. I was very happy with the result. It was as good as the store-bought Ideal Ice Cream.

Store bought Ice creams Have emulsifiers and stabilizers. An emulsifier is added to give volume to the ice cream and give it a soft texture and stabilizers are added to prevent the formation of ice crystals also to prevent it from melting soon. Apart from this they also add liquid glucose. This also prevents sugar crystals.

This is an eggless ice cream. I have used Guar Gum as a stabilizer. Other stabilizers which you can use are Alginate or CMC. You can find all these stuff in Any Bakery supply stores. I have used Amul low-fat Cream but you can also use non-dairy whipping Cream. In that case, you have to whip the Cream separately and add. I have used just 2 tbsp sugar because Gulkand has sugar in it. and also liquid glucose is sweet so 2 tbsp sugar is enough.

Ingredients
  • Full Cream Milk 500 ml
  • Cream ½ cup
  • Cornflour 1½ Tbsp
  • Sugar 2 Tbsp
  • GMS 1½ Tbsp
  • Guar Gum ¼ Tsp
  • Liquid Glucose 1 tbsp
  • Gulkand / Rose preserve ¼ cup
  • Pink Food colour 2 to 3 drops
  • Chopped cashew nuts ½ cup
  • Rose essence 1 tsp
Instructions
  1. Mix 1 Tsp sugar with Guar Gum and keep aside.
  2. In a separate bowl take cornflour, GMS, ¼ cup Milk and mix nicely.
  3. Heat milk and sugar in a pan.
  4. When it comes to a boil add Liquid Glucose and boil for 2 mins.
  5. Now add Guar gum and sugar mix and stir for a min.
  6. Next, add the cornflour mixture and cook on low flame for 5 mins until it becomes thick.
  7. Add the rose essence and switch off the flame.
  8. When it comes to room temperature blend it in a blender and strain it. (this step is important.)
  9. Pour into a container and freeze it for 6 hours.
  10. Once it is set cut into pieces.
  11. Transfer to a bowl and whip it with an electric beater till it is tripled in volume.
  12. Add the cream and beat again for 1 min.
  13. Add the chopped nuts and fold well.
  14. Pour into a container and freeze again for 8 to 10 hours or overnight.

Heat milk and sugar in a pan.

When it comes to a boil add Liquid Glucose and boil for 2 mins.

Now add Guar gum and sugar mix and stir for a min.

Add the gulkand and mix nicely.

Next, add the cornflour mixture.

Cook on low flame for 5 mins until it becomes thick and coats the back of the spoon.

Add the rose essence and pink food colour. Mix well and switch off the flame.

When it comes to room temperature blend it in a blender and strain it. (this step is important.)
Pour into a container and freeze it for 6 hours.

Once it is set cut into pieces.

Transfer to a bowl and whip it with an electric beater till it is tripled in volume.

Add the cream and beat again for 1 min.

Add the chopped nuts and fold well.

Pour into a container and freeze again for 8 to 10 hours or overnight.
