Pineapple Upside Down Cake Without Oven

Pineapple Upside Down Cake is my favourite cake. In fact, I like any cake that has real fruits in it. It is super moist and light. You can never stop at one bite. You could make this Pineapple Upside Down Cake in individual portions or bake the entire thing in a cake tin. I made this in an 8-inch cake pan. I made this without an oven.  The best part is you don’t have to decorate it. they look beautiful on its own.

Most of the recipes call for brown sugar. But I have used regulated granular sugar because I don’t get brown sugar where I live. I used sweetened pineapple slices here. You could use fresh pineapple as well. Some people use cherries but I don’t like cherries so I skipped it. This is my way of making it. I hope you all like it.

Ingredients
For the glaze
  • Sugar ½ cup
  • Butter 2 tsp
  • Pineapple 6 rings
For the cake
  • Butter 100 grams
  • Granulated sugar ½ cup
  • Egg yolks 2
  • Flour 1 cup
  • Baking powder 1 tsp
  • Salt ½ tsp
  • Buttermilk ½ cup
  • Egg whites 2
  • Granulated sugar 2 tbsp
Instructions
  1. Line a 8-inch cake tin with parchment paper. grease it well.
  2. Sift the flour, baking powder and salt and keep aside.
  3. Arrange the pineapple pieces.
  4. Heat sugar in a non-stick pan.
  5. When the sugar starts melting turn down the flame to low and heat till it turns golden in color.
  6. Add in butter and cook till it starts bubbling.
  7. Pour this on the pineapple pieces and keep it aside.
  8. Take a big vessel. Add a layer of salt.
  9. Place a small plate inside.
  10. Heat it on medium flame for 10 mins.
  11. In a mixing bowl take butter and sugar and beat it until light and fluffy. this might take about 10 mins.
  12. Add the yolks one at a time beating for 5 mins after each addition.
  13. Add the vanilla essence and mix well.
  14. Add ⅓ part of The flour and fold it in.
  15. Add ½ of the buttermilk and mix on low speed.
  16. Repeat this process till all the flour and buttermilk is used,starting with flour and ending with flour.
  17. In a separate bowl take the egg whites and whip till frothy.
  18. Slowly add the 2 tbsp sugar whip till medium peaks are formed.
  19. Fold the whites into the batter.
  20. Pour this over the set pineapple.
  21. Place the tin carefully inside the vessel and cover it with a lid.
  22. Cook on high flame for 10 mins and 40 mins on low flame or until a toothpick inserted comes out clean.
  23. Carefully remove the tin and let it cool for 5 mins.
  24. Invert it into a plate. Do not let it cool completely else the caramel will get stuck to the pan.
  25. Serve warm.
Notes
if you do not have buttermilk then take half cup room temperature milk add half tbsp lemon juice or vinegar and let it sit for 10 mins. you substitute buttermilk with this.

Take a big vessel. Add a layer of salt.

Repeat this process till all the flour and buttermilk is used, starting with flour and ending with flour.

Slowly add the 2 tbsp sugar whip till medium peaks are formed.

Fold the whites into the batter.

Pour this over the set pineapple. Tap it a couple of times to remove the air bubbles.

Place the tin carefully inside the vessel and cover it with a lid.

Bake for 10 mins on a high flame and next 40 mins on low flame.
Carefully remove the tin and let it cool for 5 mins.
