Pineapple Muzaffar | Ananas Ka Muzaffar

Pineapple Muzaffar or Ananas Ka Muzaffar was something new to me. It is a vermicelli dessert. This pineapple Muzaffar reminds of Pineapple upside down cake. This dish was prepared by one of my favourite chef Ranveer Brar on his show Northern flavours Meethi Masti. I had noted down the recipe but then I completely forget about. I tried this last week. Although he said to have it cold. I felt it would taste better when it is warm. We had it for Iftar.

He had used fine and roasted Vermicelli. But, I didn’t have the fine one so I used the thick Vermicelli which we normally use to prepare sheer korma.

I have used Homemade Instant Mawa and Rabdi. You can use store-bought Mawa if you would like.

Ingredients
  • Ghee 2 tbsp
  • Fine vermicelli 200 gms
  • Pineapple Juice 200 ml
  • Finely chopped Pineapple 100 gms
  • Sugar 2 tbsp
  • Milk 100 ml
  • Pineapple slices 4 to 5
  • Mawa 3 tbsp
  • Rabdi ½ cup
  • Chopped almonds ¼ cup
  • Elaichi Powder ½ Tsp
  • For sugar syrup:
  • Sugar 1 cup
  • Water 1 Cup
Instructions
  1. In a non-stick pan add the Vermicelli and ghee and roast it on low flame until golden brown.
  2. Keep it aside.
  3. Boil sugar and water until it reaches 1 thread consistency.
  4. Add the sliced pineapple and cook until they turn soft.
  5. In a separate pot add the pineapple juice, Chopped pineapple and 2 tbsp sugar.
  6. when it comes to a boil add the roasted vermicelli and Milk. Cover it with a lid and switch off the flame*.
  7. in a separate pan dry roast the mawa until they turn golden brown.
  8. Once the vermicelli is soft and absorbed all the liquid add sugar syrup as required. (add according to your sweetness level. )
  9. Add the chopped nuts, roasted mawa and elaichi powder and mix well.
  10. Arrange the pineapple slices at the bottom of the springform pan.
  11. Next, add a layer of vermicelli.
  12. Drizzle some rabdi on top.
  13. Add another layer of vermicelli.
  14. Refrigerate it for 1 hour before serving.
Notes
* If you are using the thick variety of vermicelli then cook on low flame for 2 mins and then switch off the flame.
Roasting the vermicelli is very important.

Boil sugar and water until it reaches 1 thread consistency.

Add the sliced pineapple and cook until they turn soft.

Arrange the pineapple slices at the bottom of the springform pan.

Next, add a layer of vermicelli.

Drizzle some rabdi on top.

Add another layer of vermicelli.

Refrigerate it for 1 hour before serving.
