Mango Mousse Cake

Mango Mousse Cake not only looks beautiful it tastes equally good. The Mango Mousse has real mangoes in it and it is eggless. This Mango Mousse Cake has three layers. For the base I have used a light and airy sponge cake soaked with simple syrup. The second layer will be mousse layer that has real mangoes in it. Ensure your mangoes are sweet and not sour. I have used Alphonso mangoes. You could even use mango crush. Third layer will be jello. I have used orange flavoured jelly but you could use  mango flavour too. you can decorate this with any fruit available. I have used apples, kiwi and cherries. If you want to make this a no-bake dessert then you can crush some digestive biscuits, Combine it with melted butter and press it down into the springform pan and proceed with the second layer.

Ingredients
  • Sponge Cake 7 inches
  • Simple syrup* ½ cup
  • Mango puree 1½ cup
  • Gelatin 1½ tbsp
  • cold water ⅓ cup
  • Whipping cream 2 cups
  • Orange jelly 1 packet
  • For garnishing:
  • kiwi
  • apple
  • cherries
Instructions
  1. Place the 7 inches sponge cake inside a 8 inch springform tin. Brush it with simple syrup.
  2. Take the gelatin in a small cup.
  3. Add the cold water and let it bloom for 10 mins.
  4. In a saucepan add mango puree and sugar. Allow it to come to a boil.
  5. Once it comes to a boil, Switch off the flame.
  6. Melt the gelatin by placing it over simmering water.
  7. Add this to the mango puree and mix it well.Let it cool down to room temperature
  8. In a separate bowl add in whipping cream and whip until stiff peaks are formed.
  9. Add about 1 cup of this cream to mango puree and mix nicely.
  10. Now pour the mixture into the remaining cream and fold gently.
  11. Spread the mousse on top of the cake. make sure to fill the side gaps as well.Decorate it with fruits and Refrigerate for 1 hour.
  12. Prepare the orange jelly according to the package instructions. let it cool down completely
  13. Pour it on top of the mousse and refrigerate for 1 hour or until the jelly sets.
  14. Unmould it and slice it into wedges.
Notes
*To prepare simple syrup combine ½ cup water and 2 tbsp sugar.
