Manchester Pudding Without Oven

I prepared Manchester pudding without oven In the month of Ramadan for Iftar. This is a meringue topped Pudding. It is also called as Queen of Pudding. It is old fashioned British Pudding. You can have this as a hot pudding or serve it cold. Either way it tastes good.

You will need sponge cake for this recipe. You can prepare at home or use store-bought cake. I prepared this without oven in an aluminium vessel. You can use pressure cooker too. If you are going to bake in an electric oven then bake in a preheated oven at 180 degree Celsius.

I used an 8 inches cake tin. If you are going to bake in oven then you can use a casserole. Whip the egg whites just before they are put on the pudding. If done in advance the egg whites will deflate and become watery.

Ingredients
  • Sponge Cake 250 gms
  • Sugar 5 Tbsp
  • Egg yolks 3
  • Egg whites 3
  • Milk 500 ml
  • Vanilla essence ½ Tsp
  • Powdered Sugar 4 Tbsp
  • Strawberry Jam 2 tbsp
Instructions
  1. Take a wide mouth aluminium vessel.
  2. Add a layer of salt.
  3. Place a small plate. Preheat it on a low flame for 10 mins.
  4. Crumble the cake into big chunks using your hand and keep aside
  5. In a bowl take egg yolks, Sugar and whisk it. Add vanilla essence.
  6. Add the milk and mix well.
  7. Layer the the cake crumbs in the cake tin.
  8. Add the milk mixture and let it sit for 10 mins.
  9. Place it inside the preheated vessel.
  10. Cover and bake for 30 to 35 mins or until the top is set
  11. Spread the strawberry jam over the cooked pudding.
  12. In a clean and dry bowl add in egg whites and beat until frothy.
  13. Now add the powdered sugar and beat until stiff peaks are formed.
  14. Pile the meringue on top of the jam layer.
  15. Place it inside vessel again and bake for 15 mins or until the meringue is browned.
  16. Allow it to cool down slightly before you Serve it.
