Italian Ladyfingers | Sponge Fingers Without Oven

Italian ladyfingers also known as savoiardi or sponge fingers are used in Italian dessert Tiramisu. These are dry, egg- based cookies which are crispy from out and spongy from inside. They are also used to make trifles and charlottes.

It is very important to whip the yolks until it reaches ribbon stage. else, when you pipe the fingers they will spread. So if your batter spreads when you pipe the fingers it means your eggs were under whipped.

I prepared this without oven. I used a square tin. lined it with parchment and piped the fingers. But only drawback was I could pipe only 10 fingers at a time. So I had to do it in batches. You could do that or simply pour the entire batter into a square tin and bake it cake style and then cut into fingers. I do this whenever I am in a hurry. Trust me you won’t find any difference in the taste.

Ingredients
  • Egg yolks 3
  • Powdered Sugar 2 tbsp
  • Egg whites 3
  • Powdered sugar 2 tbsp
  • Cake flour ½ cup
  • Salt a pinch
Instructions
  1. Take a wide mouth aluminium vessel.
  2. Add a layer of salt.
  3. Place a small plate. Preheat it on a low flame for 10 mins.
  4. In a clean and dry bowl whip the egg whites until foamy. add the salt and gradually add the sugar and whip until stiff peaks are formed. set it aside
  5. Whip the egg yolks and sugar until it reaches ribbon stage.
  6. Add the egg whites and fold gently.
  7. Finally, Add the cake flour and fold it.
  8. Transfer the entire mixture to a piping bag.
  9. Pipe the fingers onto a parchment paper lined square tin.
  10. Place the tin inside the vessel. Cover it with a lid and bake for 10 to 12 mins on medium flame.
  11. Let it cool down completely. Store it in an airtight container.
