Dosa is a South Indian breakfast. There are many varieties in dosa such as masala dosa, set dosa, onion dosa and much more. I love dosa. It’s my favourite breakfast. Furthermore, I can have it every day and still not get bored. This dosa is different from the ones u get in a hotel. It is soft and fluffy. It is a foolproof recipe. You will get perfect dosa each time. I got this recipe from my mother who learnt it from her mother.
Stepwise pictures for Plain Dosa
In a bowl take rice…
Add urad dhal..
And fenugreek seeds.
Now add enough water and soak it for at least 5 hours. Drain the water.
Add the cooked rice to it and combine.
Transfer this to a mixer grinder.
Add very cold water in little amounts and grind to a fine paste.
Transfer to a bowl.
Beat this with your hand for one minute.
Sprinkle rock salt on the top, Do not stir.
Cover it and let it ferment overnight.
Once the batter is fermented it will be double in volume.
Now stir it nicely.
In a small bowl take baking soda.
Add 2tbsp boiling water to this and immediately add it to the batter.
Mix nicely. Now our batter is ready.
Heat non-stick pan on medium flame.
Pour one ladle full of dosa batter.
Spread it starting from the center and then moving outwards.
Cover it and cook till the top part of the dosa gets cooked.
Serve hot with some chutney or Sambhar or any sabzi.
