Brown Onion Paste is very easy to prepare. They come in handy when you have to prepare North-Indian dishes. All you have to take care is not burn over fry the sliced onions. Else it will turn bitter. Since we prepare biryani very often, my Mother deep fries lot of onions and stores in an air-tight container. whenever I need Brown Onion Paste I take a small quantity out of it and grind to a paste. You can use this in any recipe that calls for brown onion paste. I used it to prepare Chicken Lababdar.
When You are frying the onions, you can add a pinch of salt. this will ensure even browning. You can also add a pinch of sugar instead of salt. Also, keep the flame medium- high. When you get light brown colour switch off the flame and drain it onto a kitchen towel. The colour gets deeper as it cools down.
- Onion 2 large Thinly sliced
- Pinch of salt (optional)
- Oil ½ cup
- Heat oil in a pan and add the sliced onions and pinch of salt.
- Fry it on medium flame until golden brown.
- Cool it and grind to a fine paste.
