Floating Island

floating island is a dessert of French origin, consisting of meringue floating on crème anglaise (a vanilla custard). The meringues are prepared from whipped egg whites, sugar and vanilla extract then quickly poached. The crème anglaise is prepared with the egg yolks, vanilla, and hot milk, briefly cooked.

The base of this dessert is Crème anglaise which is nothing but thick custard made up of eggs, milk and sugar. Floating island consists of meringue floating on a vanilla custard topped with hardened caramel. The egg whites are whipped with powdered sugar until stiff peaks are formed and then poached in milk. Floating island is usually served cold. It is a simple and easy dessert, I prepare it often when we have guests coming over and there is no much time to make something fancy.

Ingredients
  • Milk 1 litre
  • Egg yolks 4
  • Sugar ½ cup
  • Egg whites 4
  • sugar ¼ cup
  • Vanilla essence 1 tsp
  • Caramel for garnish*
Instructions
  1. Take egg whites in a bowl. Add sugar and whip until stiff peaks are formed.
  2. Heat milk in a saucepan.
  3. when it starts to simmer Add spoonfuls of meringue into the milk. poach it for 3 mins gently turning once.
  4. Drain it onto a plate. Strain the remaining milk and measure it. (you should be having 2 cups. if it is less then add some extra milk)
  5. Boil the milk.
  6. Whisk the egg yolks and sugar until it turns pale yellow in colour.
  7. Add ½ cup of the hot milk into the yolks and stir vigorously.
  8. Now, Add it to the remaining milk and cook on a low flame until it thickens enough to coat the back of the spoon.
  9. Allow the mixture to cool down to room temperature and then place in the fridge to cool.
  10. To serve, pour the chilled custard into a dessert bowl, Top it with cooked meringue. Garnish with caramel.
Notes
*To prepare caramel: melt ½ cup sugar until it turns amber in colour. Pour into a greased dish and allow it to harden. Break it into pieces and use.
