Eggless Vanilla Cake Without Condensed Milk

I have tried a lot of Eggless Cake recipes but I was never satisfied with the results until I found this recipe. This cake was prepared by one of my favourite chef Dr Lakshmi Nair. Usually, Eggless cakes are made using Condensed Milk or Milk powder. But this recipe does not have either of them and yet the cake turned out so good. I prepared this without oven.

I wanted Butterscotch flavour so I added Butterscotch essence. But you can add Vanilla essence and make Vanilla cake. One key point to remember here is do not over mix the cake batter as this will result in a dense cake which is not so pretty.

This recipe requires sour milk. You can easily prepare it at home. Just take 3/4 cup warm milk in a cup and add 1 tbsp sour curd. Mix it well and let it rest for 30 to 45 mins. It gets slightly curdled.

Ingredients
  • Maida 1½ cup
  • Baking Powder 1½ Tsp
  • Baking Soda ¾ Tsp
  • Powdered Sugar 1 cup
  • Milk ¾ cup
  • Oil ¼ cup
  • Vanilla essence 1 Tsp
  • Sour Milk ¾ cup
Instructions
  1. Grease an 8-Inch cake tin and keep aside.
  2. Sift all The dry Ingredients together and keep aside.
  3. Take a wide mouth aluminium vessel.
  4. Add a layer of salt.
  5. Place a small plate. Preheat it on a medium flame for 10 mins.
  6. In a mixing bowl take milk and powdered sugar and beat it until combined.
  7. Add in Oil and beat again.
  8. Next, Add all the dry ingredients and fold gently.
  9. Add the essence and sour milk and mix nicely.
  10. Pour into the prepared tin.
  11. Place it Inside the vessel.
  12. Cover it with a lid cook on a medium-low flame for 30 to 40 mins.
  13. Remove it and cool it for 5 mins.
  14. Unmould it and let it cool completely before slicing it.

Sift all The dry Ingredients together and keep aside.

Take a wide mouth aluminium vessel.

Add a layer of salt.

Place a small plate.

Cover it with a lid and preheat for about 10 mins on medium flame.

In a mixing bowl take powdered sugar and milk beat it until combined.

Add in Oil and beat again.

Add the essence and mix well. ( I added butterscotch essence but you can add vanilla essence )

Next, Add all the dry ingredients and fold gently.

Add the sour milk and mix nicely.

Pour into the prepared tin.

Place it Inside the vessel.

Cover it with a lid cook on a medium-low flame for 30 to 40 mins.

Remove it and cool it for 5 mins.

Unmould it and let it cool completely on a wire rack.
