Vanilla Sponge Cake | Hot Milk Cake Without Oven

Serves: 1 8-inch cake
  • All Purpose Flour ½ Cup (60 gms)
  • Cake Flour ½ Cup (60 gms)
  • Baking Powder 1 Tsp (5 gms)
  • Salt ¼ Tsp
  • Eggs Large 2
  • Milk ½ cup (120 ml)
  • Butter ¼ cup or 4 tbsp
  • Vanilla Essence 1 Tsp
  1. Grease an 8-Inch cake tin and keep aside.
  2. Sift all The dry Ingredients together and keep aside.
  3. Take a wide mouth aluminium vessel.
  4. Add a layer of salt.
  5. Place a small plate. Preheat it on a medium flame for 10 mins.
  6. In a mixing bowl Take The eggs and sugar.
  7. Place it over a double Boiler and whisk it Until the sugar is dissolved and the eggs are warm.
  8. In a separate pot take the Milk and Butter and heat it on low heat till the butter is melted.
  9. Whip the eggs and sugar mixture on high speed using a hand mixer until it reaches ribbon stage.
  10. Add the vanilla essence and Fold in the sifted dry ingredients.
  11. Take 1 cup of this batter and add it to the milk and butter mixture and whisk it vigorously.
  12. Add this mixture to the remaining Batter and mix it gently. (do not over mix and deflate the eggs.)
  13. Pour into the greased tin.
  14. Place it Inside the vessel.
  15. Cover it with a lid cook on a medium-low flame for 30 to 40 mins.
  16. Remove it and cool it for 5 mins.
  17. Unmould it and let it cool completely before slicing it.
If You want to use an oven. Then bake in a pre-heated oven at 180 degrees Celsius for 30 to 35 mins.
