Easy Chicken Kabsa

Chicken Mandi is a traditional dish from Yemen. It is now very popular among the Arab countries. First time I had Chicken Mandi was when I was in Dubai. In Fact, it was the first thing I had when I went there. It was mildly spicy. It was different from our Indian biryani. These days it has also become popular in the Malabar region.

Traditionally it is made in a tandoor. The chicken is first boiled with whole spices. This stock is later used while cooking the rice. Chicken is then cooked over charcoal. It becomes a lengthy process. I have made changes to the original recipe and made it simple. This is my way of making it and the result was too good. Everyone just loved it. I will share the traditional way of making it in my coming post. I have used Homemade Arabic spice powder. You can use store-bought ones too.

Ingredients
  • Chicken 1 kg
  • Basmati rice 3 cups
  • Onion 2 medium sized
  • Garlic Paste 1 tbsp
  • Ginger Paste 1 tbsp
  • Tomato puree 1 cup
  • Green chillies 8 finely chopped
  • Capsicum half finely chopped
  • Olive oil 3 tbsp
  • Butter 3 tbsp
  • Salt to taste
  • Mandi spice powder 2 tbsp
  • Homemade Mandi Spice Powder:
  • Coriander seeds 2 Tbsp
  • Cumin Seeds 2 Tsp
  • Pepper 1 Tsp
  • Green Cardamom 5 nos
  • Cloves 5 nos
  • Cinnamon 1 stick
  • Nutmeg 1 no
  • Bay Leaf 2 nos
Instructions
  1. Homemade Kabsa Masala Powder:
  2. Heat a pan and add the Coriander Seeds, Cumin Seeds, Cloves, Green Cardamom, Pepper, Cinnamon, Nutmeg, Bay Leaf.
  3. Dry Roast the Spices on low flame until fragrant.
  4. Allow it to cool down completely and grind to a powder.
  5. Pressure cook the chicken with 2 cups of water for up to 2 whistles.
  6. Soak the washed basmati rice in sufficient water for 30 mins.
  7. Heat butter and oil in a pan.
  8. Add the finely chopped onion.
  9. Fry until it turns soft.
  10. Add the ginger garlic paste and fry till the raw smell goes.
  11. Next, add the chopped green chillies and mix.
  12. Add the tomato puree and cook for a couple of minutes.
  13. Add the mandi spice powder, whole spices, chicken pieces and salt
  14. Add the Chicken stock and three cups of water.
  15. when the water comes to a boil add the rice and cook on high flame till the almost all the water dries up. lower the flame.
  16. Meanwhile, heat a piece of coal over direct flame.
  17. Place it over the rice using a small cup and add a spoonful of ghee and cover it immediately with a cotton cloth and a lid. Place heavy weight.
  18. Cook on low flame for 5 mins.
  19. Switch off the flame and wait for 10 mins before opening it.
  20. Serve hot with
Notes
You have to add double the amount of water than the rice. after cooking the chicken I got 3 cups of stock. so I added 3 cups of water. total 6 cups.

Heat a pan and add the Coriander Seeds, Cumin Seeds, Cloves, Green Cardamom, Pepper, Cinnamon, Nutmeg, Bay Leaf.

Fry until it turns soft.

Next, add the chopped green chillies and mix.

In goes the finely chopped capsicum.

Add the tomato puree and cook for a couple of minutes.

Next, add the cooked Chicken along with its stock and three cups of water.

Add the Mandi spice powder and salt to taste.

When the water comes to a boil add the rice.

Cook on high flame till the almost all the water dries up. lower the flame.

Meanwhile, heat a piece of coal over direct flame. Place the hot coal over the rice using a small cup.

Add a spoonful of ghee and cover it immediately with a lid.

Cover it with a lid and cook on low flame for 5 mins.

Switch off the flame and wait for 10 mins before opening it.
