Chicken Liver Masala

Chicken Liver Masala is an easy and tasty side dish that goes with rice, chapathi, Neer Dosa, and Dosa. Chicken Liver has a lot of vitamins in it. It is also a good source of protein. unfortunately, it is also high in cholesterol. Therefore it is good to have it moderately. Luckily, I don’t eat chicken liver but my brother just loves it so whenever he comes down to India my dad gets it for him. This dish is served in most of the dhabas and restaurants.

I have added onion and tomato in paste form but you can also finely chop them and add. I cooked the liver with some salt and turmeric powder in a pressure cooker for 1 whistle and then added it to the gravy. You can add it directly to the gravy and cook it along with the gravy. I am always in a hurry so I prefer to cook it beforehand.

Ingredients
  • Chicken Liver 1 kg
  • Tomatoes 2 large (grind to a paste)
  • Onions 2 large (grind to a paste)
  • Slit green chillies 5
  • Butter 50 gms
  • Oil 50 ml
  • Ginger paste 1 tbsp
  • Garlic paste 1 tbsp
  • Vinegar 2 tbsp
  • Kasoori methi 1 tbsp
  • Kashmiri red chilli powder 2 tbsp
  • Cumin seeds powder 1 Tsp
  • Turmeric powder ½ tsp
  • Coriander powder 1½ tbsp
  • Pepper powder 1 Tsp
  • Salt to taste
  • Chopped coriander leaves for garnish.
  • Garam Masala powder 1 Tsp
Instructions
  1. In a bowl add ginger paste, garlic paste, cumin seeds powder, coriander powder, Kashmiri chilli powder, pepper powder, salt and turmeric powder. mix well to form a paste.
  2. Pressure Cook the chicken liver with salt and turmeric powder.
  3. Heat oil and butter in a pan. Add the onion paste.
  4. Fry until the raw smell disappears.
  5. Add the masala paste and fry for 2 mins.
  6. Next, add the tomato paste and fry for 10 mins.
  7. Once the tomatoes are cooked add the cooked chicken liver. Mix well so that the chicken liver is nicely coated with the gravy.
  8. Now, add the chicken stock and allow it come to a boil.
  9. Finally, Add the kasoori methi and slit green chillies. mix well.
  10. Garnish with chopped coriander leaves and serve.

Pressure Cook the chicken liver with salt and turmeric powder.

Heat oil and butter in a pan. Add the onion paste and fry until the raw smell disappears.

Add the masala paste and fry for 2 mins.

Next, add the tomato paste and fry for 10 mins.

Once the tomatoes are cooked add the cooked chicken liver. Mix well so that the chicken liver is nicely coated with the gravy.
