Bombay Biryani

I like trying different varieties of biryani. I prepared Bombay Biryani for eid. Everyone at my home loved it.  I have used Homemade Bombay Biryani masala powder. You can use readymade masala powder. But for some reason I don’t like using store-bought ones. I have used Basmati rice you can use sella rice too.

If you are using basmati rice soak it in water for 1 1/2 hour and if you are using Sella rice you need to soak it for 2 hours. one most important tip I want to share is the gravy should not be very thick. else during the dum process your biryani will get burnt. So please remember this point.

Ingredients
  • For Bombay biryani masala:
  • Red chilli powder 2 tbsp
  • Kashmiri Chilli powder 2 tbsp
  • Turmeric powder 1 tbsp
  • Coriander seeds 2 tbsp
  • Cinnamon 2 sticks
  • Pepper 1 tsp
  • Black Cardamom 6
  • Green cardamom 10
  • Mace 2
  • Nutmeg powder 1 tsp
  • Star anise 2
  • Cloves 1 tsp
  • Shahjeera 1 tsp
  • For Biryani:
  • Basmati Rice 1 Kg boiled
  • Chicken 2 kg
  • Fried Onion 4 large
  • Red chilli powder 1 tbsp
  • Curd 400 ml
  • Bombay Biryani masala powder 4 tbsp
  • Ginger paste 2 tbsp
  • Garlic paste 2 tbsp
  • Green paste [ grind 4 tbsp coriander and 5 green chillies to a paste ]
  • kewra water 1 tsp
  • Chopped coriander leaves 2 tbsp
  • Mint leaves ¼ cup
  • Sliced Tomatoes 2
  • Yellow food colour 1 tsp
  • Salt to taste
  • Oil ¼ cup
  • ghee 14 cup
Instructions
  1. To prepare Bombay biryani masala powder::
  2. In small mixer jar add all the spices, dry powders and grind to a fine powder.
  3. To prepare gravy:
  4. Heat ghee and oil in a pan. Add the ginger paste, garlic paste and fry until raw smell goes.
  5. Grind the coriander leaves and green chillies to a paste and add in. Fry for a min.
  6. Add the chicken pieces and fry for 2 mins.
  7. After frying the chicken for 2 mins add in chilli powder, half of the fried onions, curd and cook for 5 mins.
  8. Now add bombay biryani masala powder.and cook covered for 10 mins.
  9. Next, Add chopped coriander leaves and mint leaves and mix well.
  10. Finally, Add the sliced tomatoes, kewra water and 1 cup water and let it come to a boil. switch off the flame.
  11. To prepare biryani:
  12. In a wide mouthed vessel add 2 tbsp melted ghee and add the gravy.
  13. Layer the rice over the gravy. Sprinkle rest of the fried onions, yellow food color, chopped coriander leaves.
  14. Cover it with a lid and cook on high flame for 5 mins and low flame for 10 mins.
  15. Serve it hot with some raita and salad.

After you fry the chicken for 2 mins add in chilli powder,

Half of the fried onions,

Curd and salt. cook for 5 mins.

Next, Add bombay biryani masala powder and cook covered for 10 mins.

Now add chopped coriander leaves and mint leaves and mix well.

Finally, Add the sliced tomatoes, Kewra water and 1 cup water and let it come to a boil. switch off the flame.

To prepare biryani:

Cover it with a lid and cook on high flame for 5 mins and low flame for 10 mins.
